-Blanco Tequila
-Fresh Lime Juice – to balance sweetness
-Pure Pineapple Juice
-Coarse Salt – for cocktail rim
-Sugar – for cocktail rim
-Fresh Lime Zest – for cocktail rim

This easy creamy pineapple coconut tequila drink is shaken up and poured into a sea salt, sugar, and lime zest cocktail glass. It makes for a delicious chilled, tropical drink experience in every sip.

We’ll rim the glass with a tasty zesty mixture of salt and lime, adding a crisp, sweet and savory contrast that complements the sweetness and acidity of the tropical fruits.

Use Cream of Coconut not Coconut Milk

Just a quick reminder to use real cream of coconut and not coconut milk as they are quite different. Cream of coconut has thick, creamy, and already sweetened finish to it. If you use coconut milk, you’ll get something totally different.

Here, due to the creamy already sweetened quality of the coconut milk as our sweetener, we don’t need any other syrups or intense sweeteners to balance drink. The cream of coconut replaces all of that.

How to make an easy pineapple coconut margarita

On a flat plate, mix 2 generous pinches of coarse salt with 2 generous pinches of sugar and sprinkle in the fresh lemon zest.  Toss together with your fingers until a coarse sandy texture is reached.
Swipe your glass with a wedge of lime and dip the rim of the glass into the sugar and salt lemon zest mixture.  Set aside.
Remove lid from the can of cream of coconut and gently stir the contents inside the can until completely combined. 
Note about the cream of coconut: A thick buttery white coconut solid will be settled at the top and a sweet clear layer will be settled at the bottom in the can. Just take your time and stir them together until combined into a creamy uniform mixture. >> Do this before using the cream of coconut in the cocktail.
Now, in a cocktail shaker, drop in the tablespoons of cream of coconut, tequila, fresh lime juice, and pineapple juice.
Add fresh ice enough to fill the cocktail shaker halfway.  Cover and shake vigorously until all the ingredients are combined, about 20 to 30 seconds, until creamy and frothy.
Taste the mixture to adjust sweetness.  If too sweet, squeeze in more fresh lime as desired.
Empty contents into your prepared cocktail glass. Garnish with a pick of skewered pineapple chunks and lime slices. If desired, top off with an additional splash of pineapple juice, stir in, and enjoy.  Serve ice cold.
