Easy Easter Cocktail That Can Be Served At Sunday Brunch

Hints of fresh lemon, vodka, and freshly muddled strawberry are all you need to craft a great start to this easy Easter cocktail that can be served at Sunday brunch.

Fresh Strawberries, Prosecco, and Bubbly Pop Make this an Easy Easter Cocktail

When you add the fresh crushed strawberries to your cocktail glass, you’ll top them of with good quality vodka and a splash of fresh citrus from a lemon wedge. Then you add in splashes of pink fizzy strawberry lemonade soda.

I used Sunkist Strawberry Lemonade soda. It adds a delicious fruity taste to the cocktail along with a fun bubblegum pink color! It really does make a pretty spring cocktail!

Sometimes delicious and colorful fruity pops just add the tastiest touch to a festive or themed cocktail… This easy purple Witch’s Potion cocktail uses a stunning blue lemonade soda along with blackberries and blueberries that really make it pop!

Don’t be afraid to use fun colorful ingredients in cocktails to dress them up and make them truly worthy of the season or occasion they represent! Every sip is a celebration.

To finish everything off, we’ll add a finishing splash of sparkling Prosecco. This (along with the fresh berries and lemon) will add to the bubbly refreshing quality of this fun Easter themed cocktail.

Make a Festive Strawberry Vodka Prosecco Easter Cocktail

To make this fun bubbly Easter cocktail, muddle one large strawberry or two smaller ones. Muddle the berries in a mixing glass or cocktail shaker. To the crushed berries, add in a splash of your favorite plain good quality vodka. Stir the crushed berries and vodka mixture with a bar spoon.

Mix Strawberry and Vodka Then Pour

Next, fill a tall slender cocktail glass with ice about three quarters of the way. Add your crushed strawberry and vodka mixture to the glass. Squeeze in the juice from a lemon wedge and splash in the strawberry lemonade pink soda pop. Use your bar spoon to give it a gentle stir.

Add Strawberry Lemonade Soda and Fresh Lemon

Top off this festive Easter cocktail the rest of the way with La Marca Prosecco or your favorite Prosecco. A dry brut style of champagne would work as well.

Ingredients
  

  • 1 to 2 fresh Strawberries - quartered and muddled plus some sliced for garnish, if desired
  • 1 oz Good Quality Vodka - Your Favorite brand.
  • 1 wedge Fresh Lemon
  • 3 to 4 oz Strawberry Lemonade Soda - I used Sunkist Strawberry Lemonade soda pop
  • 1 oz Prosecco - I used La Marca prosecco for topping off

Instructions
 

  • Muddle your fresh cut strawberries at the bottom of a mixing glass or inside a cocktail shaker. To the muddled and crushed strawberries, add a splash of vodka and stir these together with a long bar spoon.
  • Fill your tall slender cocktail glass with ice about three quarters of the way. Pour in the vodka and crushed strawberries mixture. Squeeze in the juice from a fresh wedge of lemon.
  • Splash in the pink strawberry lemonade soda pop. Using your bar spoon, give the fizzing pink pop, crushed strawberry, lemon, and vodka and gentle stir to combine inside the glass.
  • Top off the Easter brunch cocktail the rest of the way with sparkling Prosecco or dry style brut champagne. Give everything one more gentle to combine. Garnish with extra sliced strawberries, if desired. Serve chilled.

Notes

** Note On The Muddled Strawberry
If you don’t like bits of the crushed strawberry in the cocktail glass or prefer a finer consistency:
  • buy frozen strawberries and purée them in the blender with a tablespoon or two of water. 
  • Spoon the strawberry purée into the cocktail glasses with the vodka and stir together.  Follow the rest of the steps as indicated in the recipe.  
 
The strawberry purée is also helpful if:
  • making these for a crowd at Sunday brunch –  You can purée extra fruit together in blender and add to a pitcher with vodka, lemon juice, and strawberry lemonade soda pop.  Stir gently and toss in extra sliced strawberries. Pour into individual glasses over ice and then finish by topping off with Prosecco.
Remember to keep Prosecco and strawberry lemonade soda nicely chilled in the fridge to keep cocktails extra crisp and cool!
