I feel like party drinks just aren’t fun without that little heaping dollop of sherbet! For this easy non-alcoholic beverage, we fill little gold party cups with spoonfuls of crushed fresh strawberry and top with splashes of strawberry soda and a little fresh lemon juice.

To assemble this festive Easter mocktail recipe start by crushing a few fresh strawberries. To do this, you can cut a few fresh strawberries into quarters. Drop 3 to 4 pieces of strawberry in your party cup or punch cup and muddle until smashed.

Add Fresh Lemon and Strawberry Lemonade Soda Pop

Next, squeeze in the fresh juice from a wedge of lemon and splash in already chilled strawberry lemonade soda pop. For my mocktails, I used Sunkist strawberry lemonade flavored soda which adds a stunning bubble gum pink color! It also adds delicious fruit flavors.

Float Some Sherbet On Top To Make an Easy Fruity Easter Mocktail

Next, add a creamy finish to our fizzing strawberry Easter celebration cocktail by floating a little sherbet on top! I like to swipe a 1 oz ice cream scooper across all the colors in a container of rainbow sherbet.

You can usually find rainbow sherbet in the ice cream section and it will usually have a mix of orange, strawberry, and lime.

Drop a little scoop of the colorful and fruity sherbet right over the top of the drink. Finish with a little splash of sparkling water or club soda. This, along with the lemon, will help to balance out the sweetness of our colorful flavors. It will help to keep this delicious Easter drink refreshing and delicious!

Garnish with a fun straw and extra strawberries if desired

Finish by dropping in a fun swirly straw or a colorful paper straw. Drop in extra sliced strawberries, (or even an orange slice or two) if desired, for another pop of finishing color.

  • 1 bottle Strawberry Lemonade Soda Pop - I used Sunkist Strawberry Lemonade
  • 2 fresh Strawberries - cut into pieces and muddled as needed
  • 1 bottle Club Soda - or Sparkling Water
  • 1 wedge Lemon Juice
  • 1 container Rainbow Sherbet

Instructions
 

  • To assemble this festive Easter mocktail recipe start by crushing a few fresh strawberries. To do this, you can cut a few fresh strawberries into quarters. Drop 3 to 4 pieces of strawberry in your party cup or punch cup and muddle until smashed.
  • Next, squeeze in the fresh juice from a wedge of lemon and splash in 3 to 4 ounces of already chilled Sunkist strawberry lemonade soda pop. 
  • Use a 1 oz ice cream scooper to swipe across all the colors in a container of rainbow sherbet and float the scoop of sherbet on top of the soda pop. 
  • Finish with a little splash of sparkling water or club soda. This, along with the lemon, will help to balance out the sweetness of our colorful flavors keeping this delicious Easter drink refreshing and delicious!
  • Serve nice and chilled. Garnish with extra sliced strawberries and a colorful paper straw. Enjoy right away!
