- In the bottom of a cocktail shaker toss in 5 chunks of fresh watermelon cubes.
- Muddle the watermelon with a muddler until watermelon is crushed and fresh watermelon juice is released.
- Splash in the fresh lime juice, simple syrup, and rum.
- Fill with ice about halfway and cover. Shake the fresh melon and rum mixture vigorously until completely combined and chilled through.
- Fill a rocks glass with a scoop of fresh ice.
- Strain the shaken cocktail mixture with a strainer into the rocks glass over fresh ice.
- Top the watermelon rum drinks with a finishing splash of the sparkling water.
- Garnish with lime wheels, skewered watermelon cubes, and fresh mint, as desired. Serve this delicious drink very cold.

- splashes Sparkling Water - such as La Croix Coconut or Waterloo Coconut Lime
