- 1 tbsp Olive Oil - to coat chicken, plus more for cooking
- 2 cups Cooked/Steamed Rice - prepared according to package directions for serving with chicken and broccoli, if desired
For The Sweet Sesame Honey Soy Sauce:
- ⅓ cup Reduced Sodium Soy Sauce - the bottle with the green cap
- 1 tbsp Sesame Oil
- 1 tsp Rice Vinegar
- 2 tbsp Honey
- 2 tbsp Brown Sugar
- 1 tsp Corn Starch Powder - for thickening slurry if desired
- 1 tbsp Water - for thickening slurry if desired
Instructions
- Begin by steaming the fresh broccoli florets, cooking until desired tenderness about 3 to 5 minutes, as desired. Remove from heat, set aside.
- In a separate bowl, toss bite-sized chicken pieces together with the onion powder, garlic powder, salt, pepper, and a drizzle of olive oil to coat and combine.Drizzle olive oil in a hot skillet. Add about half of the lightly seasoned chicken cubes to the pan (working in batches to prevent cooling and overcrowding). Cook in a pre-heated already hot pan over medium high heat until golden and cooked through, about 5 to 6 minutes.Remove chicken cubes from heat and set aside in a medium bowl.
- Repeat process with second batch of chicken cubes, cooking and tossing until golden brown all over and cooked through inside. When the second batch of chicken is done cooking, turn the heat off, scoop up the cooked chicken, remove from the skillet, and combine with the other pieces from earlier. Set aside.
- Make the sweet honey sesame soy sauce: Grab a small bowl and a whisk. Splash in the soy sauce, sesame oil, rice vinegar, honey, and brown sugar. Whisk all ingredients together to combine until brown sugar is mostly dissolved into the liquid.
- Now turn heat back on medium low and drizzle the honey sesame soy sauce into the same empty skillet from earlier, bringing sauce to a light simmer.
- To thicken sauce slightly, if desired, drizzle in a slurry made by dissolving 1 teaspoon of cornstarch into 1 tablespoon of water. Stir these in a little bowl to dissolve into a white milky liquid. Drizzle this slurry into the pan with the sauce and whisk together over medium-low heat until combined and sauce is lightly thickened, about 3 to 5 more minutes.
- Now add the chicken pieces and the steamed broccoli back into the same pan, tossing everything together to coat with the sauce. Once combined, immediately remove from heat so that chicken does not overcook, and stays juicy.Serve over steamed rice, if desired. Garnish with sliced scallions and toasted sesame seeds, if available. Serve hot.
