With buttery crisp edges and a whisper of coffee threading through every bite, these oatmeal chocolate chip cookies are cozy, a little indulgent, and quietly sophisticated. This easy recipe keeps the method simple while turning your everyday oatmeal cookie into something crunchy, rich, and downright irresistible.

There’s something magical and very natural about the combination of coffee and chocolate. The splash of coffee in these cookies doesn’t make ’em taste like a mocha. It actually better deepens the overall flavors while rounding out the chocolate in a way that’s hard to put your finger on.
That Hint of Coffee Flavor Comes Through At the End

These crunchy crispy oatmeal cookies start with a base of old fashioned oats for that irresistible chew and crispy edge, then get a jolt of flavor from a splash of chilled strong-brewed coffee mixed right into the dough.
Loaded with melty chocolate chips and baked until buttery, with deep golden brown crisp edges, they’re the kind of cookie that disappears from the plate faster than you can pour a second cup.
They are bursting with texture and flavor but not overly sweet. Feel free to serve these with a cup of morning coffee or munch on them as an afternoon pick-me-up.
Ingredients to Make Easy Crispy Oatmeal Chocolate Chip Cookies

- All Purpose Flour
- OLD FASHIONED OATS — stick with old fashioned rolled oats here, not instant or steel-cut, for that irresistible chew and crispy edge
- BAKING SODA
- FINE SALT
- UNSALTED BUTTER — softened / at room temp (make sure it’s truly soft, not melted, or the dough will spread too thin)
- BROWN SUGAR — firmly packed
- WHITE SUGAR
- STRONG BREWED COFFEE — already chilled (pouring it in hot can start cooking the oats and make your batter goopy)
- EGGS
- VANILLA
- CHOCOLATE CHIPS — I’m using semi-sweet chocolate morsels from Nestle Toll House
How To Make Crunchy Crispy Oatmeal Chocolate Chip Cookies Recipe

- PRE-HEAT OVEN: to 375 degrees F. Line a sheet pan or cookie sheet with parchment paper or a non-stick baking mat.
- SIFT DRY INGREDIENTS: While the oven heats, grab a sifter and set it over a separate medium bowl. Sprinkle in the all purpose flour, salt, and baking soda. Sift together to combine into the bowl and set aside.
- ADD SWEETENERS TO OATS: Grab a separate large bowl and sprinkle in the old-fashioned oats. Now add the brown sugar and white sugar to the same bowl.
- ADD WET INGREDIENTS TO OATS: Along with these ingredients, to the same bowl with the oats, also add the 2 sticks of softened unsalted butter along with the eggs, vanilla, and splash of chilled strong-brewed coffee.
- COMBINE OAT MIXTURE: Using an electric mixer on low, or hand mixer on low, combine all ingredients together. Combine until well blended scraping down the sides of the bowl with a spatula as necessary.
- ADD IN DRY INGREDIENTS: Once the oat mixture is combined, with the mixer still on low, sprinkle in the dry ingredients (sifted flour, salt, baking soda) a little at a time. Stir in these dry ingredients a little at a time until all of the flour mixture is incorporated. Stir just long enough to combine.
Add in Chocolate Chips + Bake

- ADD IN CHOCOLATE CHIPS: When you pour in the last of the dry ingredients, remove oatmeal cookie dough from mixer and sprinkle in the semi-sweet chocolate chips. Stir these in by hand until incorporated.
- SCOOP DOUGH ONTO COOKIE SHEET: Using a 1 oz ice cream scoop, scoop up the oatmeal cookie dough and, using your finger, transfer your scooped dough from the scoop to the baking sheet.
- GENTLY FLATTEN: Flatten scooped cookies slightly with a buttered hand.
- BAKE UNTIL GOLDEN: Bake rounded scoops of cookie dough about 3 inches apart, leaving room for them to spread. Bake crispy oatmeal cookies at 375 degrees F for about 15 minutes or until edges begin to turn dark golden brown.
LET COOL + DEVOUR

- NOTE: If your oven is faster, check sooner. These are thin buttery cookies so once they bake up, the edges tend to get a nice dark brown color from the butter fairly quickly.
- LET COOL: When baking time is up, let cookies rest on the baking sheet for 4 minutes then lift them with a very thin metal spatula and transfer to a wire cooling rack. Continue cooling for 10 to 15 more minutes.
- STORE: To retain crispiness, store cookies in a closed paper bag or divide into small cellophane bags that you can tie at the top and consume within 4 to 5 days. Makes 30 to 40 cookies depending on size of scoop.
How To Tell When Crispy Oatmeal Cookies Are Done

To test this out, scoop one or two cookies and bake in the center of your tray. You’ll get a closer idea of the bake time for your oven. Otherwise, use that dark golden brown color on the edge of the cookie as your indicator to help you tell when the oatmeal cookie is done.
If your test cookies have more of a chewy texture, then let bake a little longer, about another minute or so to help get the crispy outer edge.
A Few Baking Tips and Notes:

– With the added moisture of the extra splash of brewed coffee, these oatmeal cookies will need a few minutes longer (15 to 16 minutes) than your typical oatmeal cookie (normally about 12 minutes) to bake up and crisp to that crunchy buttery finish.
– Again, if your oven is fast, check the coloration on the cookies sooner, and start by test-baking one or two cookies on your sheet at first to get that crunchy cookie bake time down to a science (usually around 15 minutes).

-If cookies are still too tender (after proper cooling on a rack) add 1 to 2 minutes extra to each baking time to help the edges reach a crunchier texture, but avoid burning edges and bottoms.
– Be sure to pour in about a 1/4 cup of chilled/cooled strong-brewed coffee into the batter. Pouring in hot coffee might cook the oats a bit resulting in a goopier mixture that may be a bit harder to work with.
– To retain crispiness, keep finished cookies in a closed paper bag or divide into small cellophane bags that you can tie at the top and consume within 4 to 5 days. Makes 30 to 40 cookies depending on size of scoop.

And there you have it — a cookie that’s crispy at the edges, a little chewy in the middle, and carrying just enough coffee flavor to make you feel like you’re getting away with something. These crispy coffee oatmeal chocolate chip cookies are effortless enough for a weeknight craving but special enough to share (if you’re willing). Bake up a batch, pour yourself a cup of coffee, and enjoy the payoff.
