In a cocktail shaker filled halfway with ice, use a jigger to measure and splash in the vodka, peach schnapps, and pineapple juice.  
Shake vigorously, really well, until chilled and combined.
Using a cocktail strainer, strain into a martini glass.
Using a bar spoon with the back pressed against the side of the glass, slowly drizzle down a bit of maraschino cherry/grenadine syrup. Do it slowly so that it flows down to the bottom of the glass creating a beautiful beachy sunset ombre color.
Top with a light splash of the sparkling water, such as Waterloo Tropical Fruit
Garnish with cherries and pineapple chunks, or orange slices.  Serve ice cold
