Ingredients
  

  • 1 container Frozen Piña Colada Mix - I used Bacardi Mixers Piña Colada mix
  • 3 to 5 cups Fresh Ice
  • 1 can Unsweetened Coconut Cream - optional
  • Sanding Sugars in Red and Green - For rimming glasses
  • 1/2 cup White or Gold Rum - Such as Bacardi - add rum to taste starting with about half a cup as desired until the light flavor of rum is apparent in flavor.

Instructions
 

  • Grab your cocktail glasses and dip the rims in simple syrup or light corn syrup. Set in the freezer to harden and stabilize while you prepare the cocktail.
  • In a blender, combine frozen piña colada mix with ice and your favorite rum. Optionally you can add a little unsweetened coconut cream to bump up the creaminess and coconut flavor, if desired.
  • Blend all ingredients together and taste for adjustments. Remove glasses from the freezer and pour frozen piña colada mix in each cup. Garnish with candy canes or Christmas drink stirrers.
  • To dye an entire batch of cocktail mix in red or green, add 3 to 5 drops of food coloring to the blender with the rum and cocktail mix and then blend together.
  • To dye individual servings, add 2 to 3 drops of red or green food coloring to individual glasses and stir well with a spoon. Leave some white, dye some red, and dye some green to create a festive display of multi-colored holiday coladas! Enjoy ice cold.
