Drop in your pineapple chunks into the bottom of a cocktail shaker. Muddle all of the pineapple chunks until completely crushed and juicy, extracting as much juice as possible from the fruit.
Splash in freshly-squeezed lime juice and simple syrup.
To the same cocktail shaker, splash in your vodka.
Fill shaker with ice and shake really well. Take your time shaking and let the pineapple chunks, vodka, lime juice, simple syrup, and ice mix down really well in the cocktail shaker.
Using a cocktail strainer, strain the pineapple cocktail mixture into a tall glass over fresh ice.
If desired, top with a hint of crisp sparkling water or chilled prosecco for added fizz.
Garnish with fresh pineapple chunks and lime.
