3 oz Prosecco - chilled - brut dry non-sweet prosecco or brut champagne ¼ oz Elderflower Liqueur - such as St. Elder or St. Germain 1 scoop Rainbow Sherbet - 1 oz scoops, slightly softened - one to two scoops, as desired
Grab a cocktail glass with a wide opening such as a coupe champagne glass or wine glass and in a scoop of the rainbow sherbet.
Drizzle the rainbow sherbet with the elderflower liqueur.
Top the rainbow sherbet and liqueur with prosecco sparkling wine to fill the rest of the way. Serve immediately, serve very cold.
