Rosemary Lemon Syrup

A simple syrup infused with rosemary and lemon peel to sweeten cocktails, teas or juices

Ingredients
  

  • 1 cup Water
  • 1 cup Sugar
  • 2 Rosemary sprigs
  • 1 Lemon peel

Instructions
 

  • Over low heat, combine water and sugar and toss in rosemary sprigs.
  • As the liquid heats in the pan, gently poke rosemary sprigs with a fork.  This will kickstart the steeping process and draw out the aromatics of the rosemary. 
  • After about 5 minutes–when the sugar is melted through and the rosemary begins to give off fragrance–toss in the lemon peel.
  • Steep for another 7 or 8 minutes on low heat.
  • Turn off heat and let sit for another few minutes.
  • Chill and store in a tightly covered container and use to flavor cocktails, juices or teas.

Notes

I didn’t want the lemon peel to overpower the flavor of the rosemary and for this reason I did not toss it in right away. Citrus peels have strong oils and powerful aromatics. Putting it in halfway through gives the rosemary a head start and gently flavors the syrup later on.  What you have left is a perfect balance of herbal and citrus notes that will elevate the taste of any cocktail.
