Pink Grapefruit Strawberry Rum Coupe Cocktail | Bacardi Rum Recipe

Inspired by the balance and simplicity of the classic daiquiri cocktail, this simple Bacardi rum recipe is laced with fresh strawberry and pops of sparkling pink grapefruit. An easy fruity rum cocktail for any occasion.

Ingredients
  

  • ¾ oz Fresh Lime Juice
  • ¾ Simple Syrup
  • 2 oz Bacardi Light Rum - or your favorite good quality light rum
  • 2 whole Strawberries - tops removed and quartered
  • Sparkling Pink Grapefruit Juice - such Sparkling Ice Pink Grapefruit, Fever Tree Pink Grapefruit, or Izze Sparkling Grapefruit

Instructions
 

  • Remove the tops from two fresh strawberries.  Cut each into four pieces. Now toss them into the bottom of a cocktail shaker.  Muddle the strawberry chunks until the fresh fruit juices release and berries begin to crush.
  • Next, splash in fresh squeezed lime juice and simple syrup.  Lastly, to the same cocktail shaker, splash in the Bacardi light rum.  
  • Fill the shaker the rest of the way with fresh ice. Shake vigorously until ingredients are combined and chilled all the way through (and ice is slightly beginning to crush in the shaker).
  • Strain the strawberry, lime, simple syrup and rum mixture. Strain into a coupe glass and top off  with the sparkling pink grapefruit juice.
  • Garnish with fresh lime slices, strawberry slices, or rose petals.  Be sure to serve this delicious cocktail ‘up’ while nice and cold.
