Ingredients
  

For The Tomato Salsa Fresca / Pico De Gallo

  • 1 cup Diced Vine Ripe Tomato
  • cup Chopped Red Onion
  • 1 tbsp Minced Cilantro
  • ½ tsp Fresh Squeezed Lime Juice
  • ¼ tsp Pinches of Coarse Salt and Cracked Pepper - seasoned to desired taste

For the Guacamole

  • 1 large Hass Avocado - dark skinned, ripe, and tender to the touch 
  • 1 tbsp Fresh Minced Cilantro
  • ½ tsp Fresh Squeezed Lime Juice
  • ¼ tsp Pinches Coarse Salt and Cracked Pepper - seasoned to desired taste

Instructions
 

  • To start the guacamole, slice open your avocado removing the avocado pit and skin. Place in a medium bowl and smash together with a fork until you achieve a creamy texture with no large chunks.
  • Brighten the avocado flavor by adding a juicy squeeze of lime and fresh herbs. Splash about half a teaspoon of freshly squeezed lime juice and season with pinches of coarse salt and cracked pepper. Sprinkle in a tablespoon of freshly minced cilantro. Stir together until evenly combined and set aside.
  • In a separate bowl combine diced vine ripe tomato with chopped red onion. Sprinkle in minced cilantro and add the fresh squeezed lime juice. Sprinkle with pinches of coarse salt and pepper. Stir to combine and taste to adjust seasonings as desired.
  • Additionally, at this point you might add in a small diced jalapeño (or even hotter habanero pepper) to stir into the tomato salsa if you want to make it spicy.
  • Using a spatula, transfer the guacamole mixture to a small wide serving bowl. Use the flat part of your spatula to smooth down the guacamole to an even layer to create a bed for the salsa layer.
  • Spoon the tomato salsa fresca pico de gallo mixture over the guacamole. Garnish with more fresh cilantro sprigs and lime slices. Serve alongside your favorite restaurant style tortilla chips.
