Shrimp Fried Rice with Mixed Vegetables | Easy Fried Rice From Leftover Rice

An easy asian-inspired favorite, this quick pan-tossed shrimp fried rice with frozen vegetables is made from leftover rice and will easily become the tasty and fast weeknight dinner you gotta have in your life.

Equipment

Large Wide Skillet I used a 3.5 Qt. Staub Cast Iron Skillet / 12 in. Wide Skillet

Ingredients
  

  • 4 cups Leftover White Rice - or Cooked Rice
  • 2 to 3 tsp Fresh Ginger - minced
  • 2 cloves Fresh Garlic - minced
  • 1 Yellow or White Onion - small diced
  • 4 tbsp Soy Sauce
  • 1 tbsp plus 1 tsp Sesame Oil
  • 1 tbsp Olive Oil
  • 1 tsp Mirin - Japanese rice wine for cooking (optional, but recommended if available)
  • 2 cups Frozen Mixed Vegetables
  • 1 lb Frozen Medium Shrimp - thawed and drained

Instructions
 

  • In a small mixing bowl, whisk together soy sauce, sesame oil, and mirin. Set aside.
  • Drizzle olive oil over a large skillet and toss in diced onion along with fresh minced ginger. Stir and cook until softened, translucent, and fragrant.
  • Now add in minced garlic and continue stirring, cooking for another few minutes until garlic is mixed in and fragrant. Toss in frozen mixed vegetables and continue stirring in the pot until vegetables are mixed in with the garlic, onion, and ginger. Continue cooking until vegetables are softened and tender.
  • Add in thawed medium shrimp and stir into the vegetables. Cook just long enough to get coated in with the onion and vegetables and warm through in the pot. About 2 or 3 minutes.
  • Now add in prepared/cooked white rice and drizzle in the soy sauce mixture we prepared earlier. Stir this in with the rice, shrimp, and vegetables. Continue cooking until the soy sauce mixture has evenly coated all of the rice, shrimp, and vegetables.
  • Garnish with minced parsley or a little sliced green onion for some color, if desired. Drizzle with a little Sriracha sauce for a spicy kick, if desired. Serve hot.

Notes

To ensure shrimp stays juicy and soft:
Try not to overcook the frozen shrimp in the pan once it's mixed in with the veggies. When overcooked, it will have a tougher consistency.  It takes just a few minutes (depending on the size of your shrimp) to get job done and keep it tender and juicy.
