Healthy Bow Tie Pasta Recipe With Chicken, Spinach and Tomatoes

Ingredients
  

  • 1 pack 3 or 4 Boneless Skinless Chicken Breast - cut into bite sized cubes
  • 3 to 4 cups Bowtie Pasta - Cooked and ready to toss in
  • 5 oz container Fresh Spinach
  • 1 container Cherry Tomatoes - cut in half
  • 1/2 cup Shallot - fine or small dice
  • 2 cloves Garlic - minced
  • 1/2 tsp Coarse Salt + Ground Pepper - for seasoning chicken before cooking
  • 1/2 tsp Dried Oregano
  • 1/2 tsp Dried Basil
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 1/4 of a lemon Fresh Squeezed Lemon Juice - from a 1/4 of a fresh lemon
  • 1 tbsp Olive Oil
  • 1 tbsp Butter
  • 3/4 to 1 cup Chicken Stock or Vegetable Stock
  • 1/4 cup Dry White Wine

Instructions
 

  • Cut chicken into bite sized cubes and toss in a bowl with salt, pepper, dried oregano, dried basil, onion powder, garlic powder, and the juice of 1/4 lemon plus a drizzle of olive oil. Toss to coat.
  • In a wide large skillet over medium heat, drizzle a little more olive oil and toss in the seasoned chicken. Cook until golden on the outside and cooked thoroughly on the inside, about 15 to 20 minutes. Remove from pan and set aside to rest.
  • Working in same skillet over medium heat, deglaze the pan with a generous splash of dry white wine, scooping and stirring up any bits from the bottom of the pan as you go. Now toss in a tablespoon of butter plus diced shallot and give it a stir to sweat the shallot. Continue cooking until shallot is tender and golden, about another 5 minutes. Toss in minced garlic and stir together. Continue cooking until garlic is fragrant, about another 2 to 3 minutes.
  • Now toss in cherry tomatoes and stir to combine. Cook stirring to soften the tomatoes, about about another 5 to 8 minutes and then splash in chicken stock and white wine. Season with additional pinches of salt and pepper at this point, if desired.
  • Bring this mixture to a simmer and then cover, reducing the heat to low. Cook covered for another 15 to 20 minutes minutes or until tomatoes are tender and diced onion is fully cooked. 
  • Remove the cover and add one 5 oz container fresh spinach in. Stir until spinach is wilted and then add cooked chicken and prepared bow tie pasta back into the pan. Stir to combine.
  • Garnish with fresh basil or minced parsley. Sprinkle with lots of grated parmesan cheese and drizzle with a little more olive oil to finish, if desired. The pasta will drink up all that delicious cooking liquid from the pan. Serve hot.
