Quick Tomato Basil Chicken

Ingredients
  

  • 1 pack Boneless Skinless Chicken Breasts - cut into 1 inch cubes
  • 2 cups Fresh Basil Leaves - packed
  • 1 or 2 cloves Garlic
  • 1 tsp Coarse Salt - for seasoning chicken
  • 1/2 tsp Cracked Pepper - for seasoning chicken
  • 1/3 cup Good Fruit Olive Oil - plus 1 tbsp for cooking
  • 1 tsp Yellow Curry Powder
  • 1/2 tsp Cumin
  • pinch Salt + Pepper For Basil Puree
  • 1 pack Cherry Tomatoes - cut in half

Instructions
 

  • In a bowl, toss chicken breast cubes with salt, pepper, yellow curry powder, and cumin.
  • Drizzle a little olive oil in a hot skillet over medium heat and drop in seasoned chicken. Toss the chicken turning and stirring it to brown on all sides. Cook for about 15 to 20 minutes or until cooked through.
  • In a food processor, puree fresh basil leaves with olive oil, fresh garlic, and a pinch of salt + pepper. Drizzle olive oil in little by little as you puree the ingredients together.
  • When chicken is finished cooking through, remove and transfer to a serving plate. Top with fresh tomatoes, and drizzle with fresh basil puree. Top with an extra squeeze of lemon or lime if desired. Serve with your favorite short pasta, orzo, or steamed rice, if desired.
