Equipment

grill or grill pan

Ingredients

  • 3 large Ripe Peaches - or 6 smaller peaches - sliced in half core removed
  • 2 tbsp Bourbon
  • 2 tbsp Honey
  • 1 tbsp Fresh Lemon Juice
  • 1/2 cup Mascarpone - room temp
  • 1 tsp Vanilla
  • 1/2 tsp Almond extract - if desired. Optional.
  • Fresh Mint Leaves - for garnish

Instructions

  • Brush a hot grill with olive oil or canola oil and place peach halves cut side down on the grill and cook until peaches become slightly tender, carmelize a bit, and grill marks form on the flesh. Flip after 4 or 5 minutes and cook until skin chars slightly on the other side, another 4 or 5 minutes.
  • Remove from grill and set grilled peaches on a wide serving dish. Remove skins, if desired. In a small bowl, combine bourbon, honey, and lemon juice. Whisk together until mixed and drizzle the bourbon mixture over the grilled peaches, reserving a few tablespoons.
  • In a second small bowl, combine mascarpone and vanilla. Mix together with a spoon until thoroughly combined and gently dollop the vanilla-flavored mascarpone over each halved grilled peach. Garnish each one with a sprig of mint and drizzle the remaining reserved bourbon honey mixture over the top. Serve immediatly.
