Spicy Salsa Recipe For Grilled Tomatillo Salsa Verde

A simple but delicious spicy salsa recipe for the freshest char-grilled salsa verde made from grilled tomatillos, cilantro, spicy jalapeño and a dash of lime.

Ingredients
  

  • 6 whole Tomatillos
  • 1 Jalapeño
  • 1 medium Onion
  • 1/3 cup Fresh Cilantro - or more if desired
  • 1 clove Garlic
  • 1 or 2 tbsp Water
  • 1 or 2 wedges Fresh Lime
  • Coarse Sea Salt

Instructions
 

  • Remove the dried leafy husks from your tomatillos and wash well with water.
  • Rub your grill or grill top with a little oil. Pre-heat and add tomatillos. Char and roast the tomatillos on your grill by turning until cooked and browned mostly all around. Add the onion and jalapeño and brown these as well. I cut my onion in half and then set it on the grill. I left the jalapeño whole. When there are no bright green spots left on the tomatillos and they are tender when touched with the tongs, move to a separate platter and set aside. Let cool for 10 minutes or so.
  • In a food processor combine the tomatillos, onion, garlic, cilantro, and a little bit of water. Blend until just barely combined. Now add in a squeeze or two of fresh lime juice and sprinkle in some salt. Season to desired taste with salt and give it a few more pulses. Consistency should be chunky and saucy but not watery.
  • Serve by pouring into a bowl alongside your favorite corn chips. Garnish with fresh cilantro, lime wedges, and a little more chopped onion over the top, if desired.
